Guest Blog: Heart-Warming Blackberries and Cream Oatmeal (Vegan, Gluten Free)

Are you the type of person that could eat oatmeal every. single. day and never get sick of it? We mean, what's not to love? Oatmeal is delicious, filling, nutritious and warms the belly even when the weather outside is being unrealistic.
Oats are full of soluble fiber to support healthy digestion, and offer slow burning complex carbs to fuel even the craziest of mornings. Oatmeal is also a great source of beta glucan sugars - special polysaccharides that have been shown to help improve heart health by lowering LDL cholesterol levels (the type associated with heart disease and high blood pressure).
We're delighted to share with you a delicious recipe by Leah of Leah's Plate that will surely become part of your oatmeal repertoire.
Creamy oats enriched with ground flax for a little added protein and omega 3 fatty acids plus cinnamon and banana for added flavor. The best part may have to be the topping: a flavor and nutrient packed combination of juicy blackberries, coconut yogurt, creamy Sprouted Almond Butter, hemp seeds and bee pollen. It is the perfect way to start the day, especially in the colder months.
Heart-Warming Blackberries and Cream Oatmeal
Serves 1
Ingredients:
Oatmeal
1/2 cup oats
2 ground flax seeds
1/4 tsp cinnamon
1/2 mashed banana
1 cup almond milk
Toppings
1 cup blackberries
3 tbsp coconut yogurt
1 tbsp Dastony Stone Ground Sprouted Almond Butter
1/4 tsp bee pollen
1/4 tsp hemp seeds
Instructions
1. Add the almond milk to a small pot over the stovetop and bring to a boil. Immediately reduce the heat to low and add the oats, flax seeds, cinnamon and banana.
2. Cook until almost all of the liquid is absorbed, about 5 - 10 minutes, stirring every few minutes.
3. While the oatmeal is cooking make the stewed blackberries by combining the blackberries with 2 tbsp of water over a small pot on the stovetop and simmering for about 5 minutes.
4. Spoon the oatmeal into a bowl and add the coconut yogurt followed by the stewed blackberries, almond butter, bee pollen and hemp seeds.
