Criollo Cacao: The Best in the World?

There are actually 3 main varieties that are used commercially: Trinitario, Forestero, and the more rare, highly prized Criollo variety. While Trinitario and Foresto have been heavily hybridized for commercial production, Criollo more closely resembles the ancient cacao consumed by native cultures in Mexico and Central America such as the Mayans and Aztecs. You may have guessed, we use the best: 100% fairly traded and certified organic Criollo cacao collected from small farms cooperatives across Peru. Criollo is knows for its incredibly diverse flavor profile, which is prized by chocolate connoisseurs: aromatic and fruity with hints of caramel, nuts and vanilla.
